Managing Increased Microbial Growth in Processing Equipment During Summer Months

Processors should be vigilant about increased microbial growth on their equipment in the summer due to increased temperatures, potentially higher humidity levels, and even human factors.

The potential for increased microbial growth can affect all types of processing equipment in food, dairy and beverage processing plants. It is important to take preventive steps to mitigate contributing factors before they affect product quality and food safety.

Beyond the safety issues raised by elevated microbial growth, equipment function can be affected as well. Biofilms on surfaces can decrease heat transfer in evaporators and increase pressure drop in membrane systems. Clogging of filters, membranes and spray nozzles can occur. Corrosion is also possible as some microorganisms produce acids that can negatively impact equipment surfaces.

All of the above effects can lead to higher maintenance costs and shortened equipment lifespans if precautionary methods aren’t taken.

To prevent increased microbial growth, plant operators should refer to the following checklist of possible prevention techniques:

  1. It may be necessary to clean the equipment more often.
  2. Test incoming water for possible contamination and pre-treat as needed.
  3. Inspect seals and gaskets to ensure they are intact. This can help prevent product residue accumulation.
  4. Verify temperature controls and cooling systems are functioning properly
  5. Monitor pH levels in your CIP solutions and adjust for maximum effectiveness.
  6. Inspect spray balls and nozzles to ensure they are thoroughly reaching all areas during cleaning
  7. Check air filters. Replace or clean HVAC and compressed air filters more frequently.
  8. Check that your product storage equipment is maintaining proper temperature and humidity levels.
  9. Proactively inspect and clean hard-to-reach areas that are prone to harboring residue, and therefore microbes.
  10. Review your sanitation protocols and retrain staff. Make an extra effort to reinforce SOPs during this time when many staff take vacation and some shifts may have new or inexperienced personnel on duty.
